La Journee de L’escargot Celebration – Meet the Maker Dinner Series with Domaine Cornu

On Thursday 26th May 2016 Lutèce and Romain Bapst are celebrating the snail day, La Journee de L’escargot a tradition coming from the Burgundy region in Spring time with the Burgundy wines du Domaine Cornu

Domaine Cornu is a small family owned Burgundian Estate located in Magny les Villers, a small village next to Nuits-Saint-Georges.

This village enjoys an exceptional location in the heart of the Cote D’Or, between the famous Cote de Nuits and Cote de Beaune. Domaine Cornu is a family business, with four generations of experience.

Colette and Claude ran the business for 40 years; Claude left a prestigious position at Domaine Romanée Conti to start his own label.

Today Alexander leads the vineyard & winemaking whilst Isabelle (his sister) the commercial and administrative management.

They produce from 19 acres of vines. – The reds are not inoculated whilst the whites are. – Fruit is de-stemmed – Reds are oxidatively handled, then left alone once in barrel – 1/3 of production is white. – Fermentation occurs in stainless steel then moved to oak for elev-age, were the majority being 1/3 new & 2/3 old

Here’s just a taste of what is in store for the night by chef Bapst 6 courses celebrating the “Escargot”and specialities from the Burgundy: Snail terrine & parsley puree, “Matelote with yabbies, snails & Murray perch, Guinea-fowl, foie gras & savoy “Pithiviers”…
